Writing about wine in such a time requires a delicate balance: On one hand, the desire to celebrate the holiday and spring, and on the other hand, the complex reality and the desire to support the local industry and Israeli agriculture, which is on the front line.

This year, the Seder night glass of wine feels heavier than ever. However, within this reality, the Israeli spring does not stop. It arrives in bloom, in the “crazy” weather, and in the white wines poured into the glasses.

In this article, we chose to focus on white wines that symbolize freshness and optimism. Wines that come from vineyards, some of which stood on the line of fire, from wineries that did not stop working even under the echoes of explosions, and from the understanding that now, support for Israeli wine is a statement of connection to the roots.

White wines are the ones that will bring a bit of light and freshness to our holiday table.

The wine produced from Sauvignon Blanc grapes from the Beko’a vineyard on the slopes of Judea is fresh and aromatic, with notes of citrus and guava and balanced acidity. Price: NIS 58.

Tabor Winery, Artisanal Elements, Chenin Blanc 2025: Chenin Blanc grapes come from Mitzpe Ramon, the southernmost vineyard of the winery. Aromas of green apple, lemon, and slight honeyed notes, refreshing balanced acidity, minerality and crispness, with a long and tempting finish. Price: NIS 65.
